I've not heard of pairing before as its supposed to do it all seamlessly, maybe its just because its an older mac that does not have bluetooth pairing to the device and therefore needs to authorise it? Upon switching it on, the messages app on your mac will bounce and show a code which you enter on your iPhone to pair the devices. By default, mine was switched off which is why it wasnt working. On your iPhone, go to Settings > Messages > Text Message Forwarding, and ensure that you can see your mac in the list and it is switched ON. Go to preferences of Messages on your mac and do the same. To be clear, its not that I needed hand off, its that late 2011 MBP's were intentionally black listed in beta 6 and the general release on purpose. Considering the piss poor performance of my 6 in the blue tooth department, the terrible battery life in all but beta 5, and now this, I'll most likely not be returning to Apple for a new computer int he future and will transition my family to another brand. Apple should seriously reconsider this and put machines that are in the grey area of compatibility back in. Doing this, IMO, is a slap in the face to users. I think we've all dropped a good amount of money on Apple products. It seems to me Apple deliberately blacklisted certain cards that hey knew were comparable in order to get people to buy a new mac if they want full functionality. It was working fine on my iPhone 6 and late 2011 macbook pro with Beta 5. There's no reason that handoff doesn't work. This is a large chunk of ******** on apple's part and I even take slight offense to this.
